Layered Confetti Celebration Cake

Transform a plain cake into a festive confetti celebration with rainbow sprinkles and graham cracker toppings for a fun and colorful treat!
Ingredients:
  • 1 box Betty Crocker™ Delights Super Moist™ French Vanilla Cake Mix
  • Water, vegetable oil and eggs called for on cake mix box
  • 1/2 cup from 1 container Betty Crocker™ Parlor Perfect Ice Cream Toppings Confetti Sprinkles
  • 1 tub (12 oz) Betty Crocker™ Whipped Whipped Cream Frosting
  • 1/3 cup from 1 container Betty Crocker™ Parlor Perfect Ice Cream Toppings Confetti Sprinkles
  • 20 graham cracker squares (3-inch)
  • Additional Betty Crocker™ Parlor Perfect Ice Cream Toppings Confetti Sprinkles
Instructions:
  • Preheat oven to 350°F (325°F for dark or nonstick pans) and generously spray two 9-inch round cake pans with baking spray that includes flour.
  • Prepare the cake mix according to the package instructions for 9-inch round cake pans, then gently fold in 1/2 cup of colorful sprinkles. Divide the batter evenly between the pans.
  • Bake for 22 to 27 minutes until a toothpick inserted in the center comes out clean. Let cool in the pans for 10 minutes, then transfer to cooling racks. Allow to cool completely for about 1 hour.
  • In a medium bowl, mix 1 tub of frosting with 1/3 cup of sprinkles until combined.
  • Trim cake layers to make them flat. Place one layer on a plate or cake stand. Spread a thin layer of frosting on top. Add the second layer on top. Frost the sides and top of the cake.
  • Using a large knife, chop the graham crackers into pieces and scatter them casually around the sides of the cake.
  • Prepare a decorating bag with a large star tip. Fill the bag with half of the tub of frosting. Pipe 12 beautiful swirls around the top edge of the cake.
  • Cut 12 rounds from the remaining graham crackers using a small round cookie cutter. Dip each round in frosting, then in sprinkles. Place the cracker rounds, dipped side up, into the frosting swirls on top of the cake.
  • Sprinkle extra sprinkles on top of the cake and store it loosely covered at room temperature.
