Savor a delicious lunch with ham, cheese, and veggies stacked in perfect layers.
Ingredients:
  • 375.00 ml plain flour
  • 125g butter, chilled, cubed
  • 20.00 gm water
  • 2 zucchini, thinly sliced
  • 1 red capsicum, cut into 2cm strips
  • 1 bunch asparagus, trimmed
  • 150g sliced ham
  • 125g grated tasty cheese
  • 4 eggs, beaten
  • 300g carton light sour cream
Instructions:
  • Preheat your oven to a toasty 220°C and prepare a 20cm (base) springform cake pan by greasing and lining it.
  • Combine flour and butter in a food processor until mixture resembles fine breadcrumbs. Pour in water and process until a soft pastry forms. Remove, lightly knead, then place between 2 sheets of baking paper. Roll out into a 23cm circle and use to line the base and half-way up the sides of the pan. Refrigerate for 30 minutes.
  • Preheat the grill until sizzling hot. Grill the zucchini, capsicum, and asparagus for about 2 to 3 minutes per side, or until they are tender. Allow to cool.
  • Arrange slices of savory ham, rich cheese, and vibrant vegetables on top of the delicate pastry. Whisk together eggs, tangy sour cream, and a pinch of salt and pepper, then generously pour over the colorful vegetables.
  • Prepare the cake pan on a baking tray and bake for 15 minutes. Lower the temperature to 190°C and bake for an additional 50 to 60 minutes, or until set. Enjoy with a side of dressed salad.
