Try this gourmet baked pastry toastie with ham, cheese, spinach, and capsicum - a delicious twist on a classic pizza pocket.
Ingredients:
  • 4 sheets frozen puff pastry, just thawed
  • 115g (1 1/3 cups) grated Colby cheese
  • 160g thinly sliced ham, coarsely chopped
  • 2 green shallots, thinly sliced
  • 60g baby spinach leaves
  • 125g (1/2 cup) chopped chargrilled capsicum
Instructions:
  • Preheat your oven to 220C/200C fan forced and prepare two baking trays with baking paper.
  • Cut two pastry sheets in half diagonally and arrange them on the trays, leaving space for expansion. Evenly sprinkle the cheese over the pastry, keeping a 1.5cm border. Layer the ham, shallot, spinach, and capsicum on top. Gently brush the border with the beaten egg.
  • Take the remaining pastry sheets and halve them, then lay them over the filling. Seal the edges by pressing them with a fork. Brush the top of the pastry with egg and prick each parcel four times with a fork to release steam. Bake until golden brown, approximately 20 minutes.
  • Slice each parcel into 3 generous pieces for a satisfying meal, or into smaller bite-sized pieces for a delightful snack.
