Upgrade your dinner game with a fast twist on classic chicken cordon bleu, featuring juicy chicken breasts layered with ham and rice, all smothered in a creamy cheese sauce.
Ingredients:
  • 2 packages (6.2 ounces each) quick-cooking long-grain and wild rice
  • 4 cups water
  • 4 thin slices baked ham, cut into 1-inch strips
  • 1 1/2 pounds chicken breast tenders (not breaded)
  • 1 jar (16 ounces) Parmesan and mozzarella cheese pasta sauce
  • 1/2 teaspoon paprika
  • 1 cup finely shredded Swiss cheese (4 ounces)
  • 1 tablespoon chopped fresh parsley
Instructions:
  • Preheat the oven to 350°F. Grease a 13x9x2-inch rectangular baking dish with cooking spray. Combine rice, seasoning packets, and water in the baking dish. Layer ham over the rice, followed by chicken tenders. Top each chicken tender with pasta sauce and a sprinkle of paprika.
  • Cover with aluminum foil and bake for 40 minutes. Remove foil and continue baking for about 20 minutes, or until the rice is tender and the chicken is cooked through. Sprinkle cheese on top and bake uncovered for an additional 5 minutes, or until cheese is melted. Finish by sprinkling with parsley before serving.
