Chicken Cordon Bleu and Rice Casserole

Impress guests with Chicken Cordon Bleu - a delicious dish featuring chicken breasts, ham, and Swiss cheese. Perfect for entertaining!
Ingredients:
  • 2 small carrots, shredded (1 cup)
  • 2 tablespoons butter or margarine
  • 2 packages (6 oz each) fast-cooking chicken and wild rice mix
  • 4 cups boiling water
  • 8 boneless skinless chicken breasts (about 2 1/2 lb)
  • 4 slices (1/8 inch thick) cooked ham, cut in half
  • 4 slices (1 oz each) Swiss cheese, cut in half
Instructions:
  • Preheat oven to 350°F and coat a 13x9-inch glass baking dish with cooking spray. Combine carrots, butter, rice mix, and water in the dish. Place chicken on top of the rice mixture and layer each breast with ham.
  • Cover the dish tightly with foil and bake for 55 to 60 minutes, or until the liquid is absorbed and the chicken juices run clear when the thickest part is cut (reaching 170°F).
  • Lay the cheese slices over the ham and bake without covering for an additional 3 to 4 minutes, or until the cheese is melted to gooey perfection.
