Delicious marinated yogurt chicken perfect for shawarma sandwiches or a Lebanese dinner.
Ingredients:
  • 1 cup plain yogurt
  • 0.25 cup lemon juice
  • 1 tablespoon tomato paste
  • 3 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 0.5 teaspoon salt
  • 0.5 teaspoon ground black pepper
  • 0.25 teaspoon red pepper flakes
  • 2 pounds skinless, boneless chicken breasts, cut into 1/2-inch strips
Instructions:
  • In a bowl, combine yogurt, lemon juice, olive oil, tomato paste, garlic, cumin, coriander, salt, pepper, and red pepper flakes. Add chicken strips and marinate in the refrigerator for 8 hours to overnight. Cover with plastic wrap.
  • Position the oven rack 6 inches below the broiler, then preheat the broiler in the oven.
  • Take the chicken out of the bowl and lay it out evenly on a broiling pan, disposing of any leftover marinade.
  • Broil chicken for around 10 minutes, flipping it once, until the juices run clear. Verify doneness by inserting an instant-read thermometer into the center - it should read at least 165°F (74°C).
