Lebanese-style grazing plate recipe

Impress guests with a delectable Lebanese grazing plate. Ideal for casual entertaining.
Ingredients:
  • 2.50 gm ground cumin
  • 2.50 gm smoked paprika
  • 500g Lamb Backstrap or Lamb Leg Steak
  • 2 large zucchini, peeled into ribbons
  • 120g baba ghanoush
  • 250g cherry tomatoes, halved
  • 125.00 ml chopped coriander
  • 2 large pieces pita bread, torn
Instructions:
  • In a medium bowl, mix 2 tablespoons of oil with cumin, paprika, and garlic. Season with salt and pepper. Transfer half of the mixture to a small bowl and set aside. Add the lamb to the remaining mixture and toss to coat evenly.
  • Preheat a chargrill over medium-high heat. Grill lamb for 4-5 minutes on each side for a medium cook or until desired doneness. Remove to a plate and tent with foil.
  • Toss zucchini in the reserved oil mixture and grill for 1 minute on each side until lightly charred. Plate and serve.
  • Transfer the baba ghanoush into a bowl and elegantly drizzle with half of the remaining oil. Enjoy the rich flavors!
  • Slice the lamb into thick pieces. Mix together tomato, coriander, lemon juice, and the remaining oil in a bowl. Season the mixture. Place the lamb, tomato mix, and zucchini on a serving platter. Serve with baba ghanoush and pita bread.
