Kid-friendly exotic lunch wraps - perfect for little chefs!
Ingredients:
  • 36.40 gm olive oil
  • 2 garlic cloves, crushed
  • 42.00 gm fresh lemon juice
  • 1 (about 350g) lamb eye of loin (backstrap), cut in half crossways
  • Salt & freshly ground black pepper
  • 4 pieces wholemeal lavash flatbread
  • 1 x 225g ctn babaghanoush
  • 120g (1 cup) bought fresh tabouli
Instructions:
  • In a glass or ceramic dish, mix together oil, garlic, and lemon juice. Add the lamb, season with salt and pepper, and let marinate, turning occasionally, for 10 minutes to enhance the flavors.
  • Preheat a non-stick frying pan over high heat. Sear the lamb for 3-4 minutes per side for medium-rare or until desired doneness. Remove from heat and let it rest on a plate, covered with foil, for 5 minutes. Slice thinly across the grain into 5mm pieces.
  • Roll up one-quarter of the babaghanoush, tabouli, and lamb in a piece of lavash on a clean work surface. Secure with a toothpick, cut in half, and repeat three more times with remaining ingredients. Serve immediately.
