Tender marinated chicken filled with aromatic lemongrass and bay leaves, roasted to juicy perfection - Try this irresistible Filipino Lechon Manok recipe!
Ingredients:
  • 1 onion, chopped
  • 15 cloves garlic, minced
  • 0.25 cup calamansi juice
  • 0.25 cup fish sauce (patis)
  • 1 teaspoon ground black pepper
  • 0.5 teaspoon brown sugar
  • 1 whole chicken, cleaned and patted dry
  • 6 lemongrass stalks, or more to taste
  • 3 bay leaves
Instructions:
  • Mix together the onion, garlic, calamansi juice, fish sauce, salt, black pepper, and brown sugar in a bowl to create a flavorful marinade.
  • Place the chicken in a roasting pan and generously rub the marinade all over, making sure to coat inside the cavity as well. Allow the chicken to marinate in the refrigerator for approximately 4 hours, while reserving any extra marinade in a bowl.
  • Heat your oven to 400 degrees F (200 degrees C).
  • Prepare lemongrass by removing tough outer stalks and gently bruising inner stalks with a heavy object. Stuff chicken cavity with lemongrass and bay leaves.
  • Incorporate the oil into the remaining marinade in the bowl.
  • Roast chicken in the oven, brushing with the oil mixture occasionally, until a thermometer inserted into the thickest part of the thigh reads 165°F (74°C), for 60-90 minutes.
  • Take the perfectly cooked chicken out of the oven and let it rest in a cozy spot for 15 minutes to ensure juiciness before enjoying.
