Elevate your Filipino lechon with a tantalizing sweet and tangy liver-based sauce, enriched with vinegar, soy sauce, and brown sugar, thickened to perfection with breadcrumbs.
Ingredients:
  • 1 (14 ounce) can liver spread
  • 1.5 cups water
  • 1 cup white vinegar
  • 0.5 cup brown sugar
  • 2 tablespoons soy sauce
  • 3 bay leaves
  • 3 tablespoons olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 0.5 cup dry bread crumbs
  • 1 tablespoon cornstarch
Instructions:
  • Combine the liver spread and water in a bowl until a smooth paste forms. Stir in vinegar, brown sugar, soy sauce, bay leaves, salt, and pepper.
  • Heat olive oil in a saucepan over medium-high heat. Sauté onion and garlic until onion is translucent, around 5 minutes. Pour in vinegar mixture and boil for 2 minutes, then stir in bread crumbs. Simmer uncovered on low heat until sauce thickens, about 20 minutes. Add cornstarch to thicken further if needed.
