Leek, potato and pea soup

Simple and delicious 5-ingredient leek, potato, and pea soup!
Ingredients:
  • 2 leeks, pale section only, thinly sliced
  • 2 large Crème Royale potatoes, peeled, coarsely chopped
  • 1l chicken
  • 120g pea
  • 125ml thickened cream
Instructions:
  • In a large frying pan over medium heat, sauté the leek for 5 minutes until soft. Add the potato and stock, then bring to a boil and reduce heat to low.
  • Cook the mixture for 20 minutes or until the potato is very tender and the soup thickens slightly, stirring occasionally. Add the peas and cook for an additional 2 minutes until heated through. Allow the dish to cool slightly before serving.
  • Blend the mixture with a stick blender until smooth, then gently stir in half of the cream until fully incorporated. Season to taste.
  • Divide the soup evenly into bowls and finish with a drizzle of the remaining cream.
