Transform leftover roast beef into a cozy and satisfying vegetable soup, ideal for a chilly winter day.
Ingredients:
  • 2 medium potatoes, peeled and cubed
  • 1 small onion, diced
  • 6 cups water
  • 2 tablespoons beef base (such as Better than Bouillon®)
  • 0.5 pound cubed cooked beef
  • 1 (16 ounce) package frozen peas and carrots
  • 0.5 teaspoon parsley flakes
  • 0.5 teaspoon dried oregano
  • 0.5 teaspoon dried basil
Instructions:
  • In a pot, mix together potatoes, celery, and onion. Pour the water mixed with beef base over the vegetables. Bring the mixture to a boil over medium-high heat, then add beef, frozen peas, and carrots.
  • Lower the heat and add a flavorful mix of parsley, oregano, and basil. Cover and gently simmer until the veggies are tender, approximately 40 minutes.
