Whip up delicious tacos with leftover pork or turkey!
Ingredients:
  • 1 sweet corn cob, husk removed
  • 1/4 pineapple, skin and core removed, diced
  • 1/2 red onion, finely diced
  • 125.00 ml fresh coriander, chopped
  • Old El Paso Soft Mini Tortillas 10 Pack
  • 375.00 ml cooked turkey, or cooked pork, shredded, warmed
  • Fresh red chilli, thinly sliced, to serve (optional)
  • Baby herbs, to serve (optional)
  • Chilli sauce, to serve (optional)
  • Lime cheeks, to serve (optional)
Instructions:
  • Wrap the corn in a moist paper towel and microwave on high for 3 minutes or until tender. Remove kernels from cob and mix with pineapple, onion, and coriander in a bowl. Season to taste.
  • Heat the tortillas according to the instructions on the package.
  • Portion out the turkey or pork onto the tortillas and add a layer of corn salsa. Sprinkle with fresh baby herbs, chili, and chili sauce if desired. Fold the tortillas and serve with a side of lime if desired.
