Protein-packed chickpea and feta sandwich, topped with olive oil and zesty lemon. Perfect for vegetarians!
Ingredients:
  • 400g can chickpeas, drained, rinsed
  • 30.00 ml dukkah
  • 1/2 lemon, zested, juiced
  • 4 slices Abbott’s Village Bakery Harvest Pumpkin & Sunflower Seeds, toasted
  • 60g low-fat feta, thinly sliced
  • 45g (1/4 cup) semi-dried tomatoes, chopped
  • Handful of baby rocket
  • Extra virgin olive oil, to drizzle (optional)
Instructions:
  • Combine chickpeas, dukkah, lemon zest, lemon juice, and 1 tablespoon of water in a bowl. Gently mash together using a fork.
  • Spread the creamy chickpea mash on the toast, add feta, semi-dried tomato, and rocket on top. Finish with a drizzle of olive oil, if desired.
