Try flavorful bulgur pilaf instead of rice for a quick, healthy meal.
Ingredients:
  • 18.20 gm olive oil
  • 1 brown onion, finely chopped
  • 250.00 ml fine grit bulgur
  • 125g can chickpeas, drained, rinsed
  • 255.00 gm salt reduced chicken style liquid stock
  • 62.50 ml finely chopped oregano leaves, plus extra sprigs to serve
  • 20.00 ml lemon zest
  • 20g butter, chopped
  • 50g feta, crumbled
Instructions:
  • In a medium saucepan over medium heat, warm oil. Sauté onion for 5 minutes until softened. Add bulgur and stir to coat in oil. Mix in chickpeas and stock. Bring to a boil, then reduce heat and cover. Simmer for 10 minutes, then remove from heat. Let stand for 5 minutes. Stir in oregano, lemon juice, and butter until melted. Season and fold in feta before serving.
  • Garnish with crumbled feta and fresh oregano sprigs before serving.
