Lemon and oregano crumbed wings

Get creative with tonight's dinner - wings are the answer!
Ingredients:
  • 187.50 ml cornflake crumbs
  • 20.00 ml finely grated lemon rind
  • 20.00 ml dried oregano
  • 2 tsp garlic powder
  • 1.5kg chicken wings
  • Olive oil cooking spray
  • 1 baby cos lettuce, leaves torn
  • 2 medium tomatoes, cut into wedges
  • 250.00 ml pitted kalamata olives
  • Ranch dressing, to serve
Instructions:
  • Preheat the oven to 180°C/160°C fan-forced and line a baking tray with baking paper. In a bowl, mix cornflake crumbs, lemon rind, oregano, and garlic powder, then season with salt and pepper.
  • Coat each wing with the crumb mixture and place on a prepared tray. Drizzle wings with oil. Bake for 50 minutes until golden brown and fully cooked.
  • In a bowl, mix together fresh lettuce, ripe tomato, and briny olives.
  • Distribute the lettuce mixture evenly into bowls. Drizzle with the dressing and serve alongside the wings.
