Delight in the timeless deliciousness of classic flummery.
Ingredients:
  • 115g (1/2 cup) caster sugar
  • 40.00 ml plain flour
  • 12.00 gm powdered gelatine
  • 250ml (1 cup) water
  • 2 oranges, juiced, strained
  • 1 lemon, juiced, strained
  • 125ml (1/2 cup) passionfruit pulp
  • Whipped cream, to serve
  • 40.00 ml passionfruit pulp, extra, to serve
Instructions:
  • In a medium saucepan, combine sugar, flour, gelatine, water, orange juice, and lemon juice. Whisk together until smooth. Bring to a gentle boil over medium heat, stirring continuously. Let it simmer for 2 minutes.
  • Transfer the mixture to a heatproof bowl and chill in the fridge for 1 hour until the edges start to set. Add the passionfruit and transfer to a large bowl. Beat with an electric mixer for 15 minutes until thick and pale.
  • Divide the mixture evenly among four 310ml (1 1/4-cup) serving glasses. Seal each glass with plastic wrap and chill in the fridge for 1-2 hours until set.
  • Top with a dollop of whipped cream and a generous spoonful of extra passionfruit pulp before serving.
