Lemon and garlic fish skewers

Grilled zesty skewers for a quick, healthy dinner.
Ingredients:
  • 1kg thick boneless white fish fillets
  • 375g cherry tomatoes
  • olive oil cooking spray
  • 60.00 ml Lemon, Herb & Garlic Seasoning
  • 250.00 ml couscous
  • 20.00 gm butter
  • 1 lemon, rind grated, juiced
  • 62.50 ml flat-leaf parsley leaves, chopped
  • Lemon wedges, to serve
Instructions:
  • Submerge skewers in refreshing cold water for a rejuvenating 30 minutes. Discard water.
  • Cut the fish into 3cm cubes, then alternate threading the fish and tomatoes onto skewers. Lightly spray them with oil and generously sprinkle with herb seasoning.
  • Preheat the barbecue plate on high heat until sizzling hot. Reduce the heat to medium and grill the skewers for 4 minutes, turning occasionally, until perfectly cooked.
  • In a heatproof bowl, add couscous and pour 1 cup of boiling water over it. Cover the bowl with foil and let it rest for 5 minutes. Mix in butter and fluff the grains with a fork. Stir in lemon rind, juice, parsley, salt, and pepper. Serve alongside skewers and lemon slices.
