Quick and effortless microwave fish kebabs for a speedy meal.
Ingredients:
  • 1 (about 800g, 3cm thick) firm white fish fillet (such as flathead, ling or barramundi), cut into 3cm cubes
  • 80ml (1/3 cup) extra virgin olive oil
  • 20.00 ml finely shredded lemon rind
  • 60ml (1/4 cup) fresh lemon juice
  • 62.50 ml loosely packed coarsely chopped fresh oregano
  • 2 garlic cloves, crushed
  • 1.25 gm ground cinnamon
  • Salt & freshly ground black pepper
  • Bought tzatziki, to serve, if desired
  • Sliced sourdough bread, toasted, to serve, if desired
Instructions:
  • Skewer the fish pieces onto 8 bamboo skewers and arrange them in a single layer in a shallow glass or ceramic dish.
  • In a jug, mix together oil, lemon rind, lemon juice, oregano, garlic, and cinnamon. Season with salt and pepper, then whisk until well combined. Pour the mixture over the fish kebabs, ensuring they are evenly coated. Cover with plastic wrap and refrigerate for 1 hour to enhance the flavors.
  • Strain fish kebabs, saving the marinade. Place kebabs in a single layer on a large microwave-safe plate. Elevate the plate with a microwave-safe rack or upturned dinner plate. Cover the fish loosely with 2 damp paper towels and microwave on Medium/500watts/50% for 5 minutes. Brush kebabs with reserved marinade, flip, and microwave for another 5 minutes on Medium/500watts/50% or until fish is cooked through.
  • Enjoy with tzatziki and toasted sourdough, if you like.
