Try quick and delicious grilled fish for a speedy weeknight meal option. Ready in just 30 minutes!
Ingredients:
  • 1/4 cup lemon juice
  • 1 tablespoon vegetable oil
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 2 cloves garlic, finely chopped
  • 4 halibut or tuna steaks, about 1 inch thick (about 2 pounds)
  • 1/4 cup chopped fresh parsley
  • 1 tablespoon grated lemon peel
Instructions:
  • Prepare the grill by brushing the rack with vegetable oil and heating it for direct heat. Mix lemon juice, 1 tablespoon oil, salt, pepper, and garlic in a shallow glass dish or resealable plastic bag. Add the fish and coat it with the marinade by turning it several times. Cover and refrigerate for 10 minutes.
  • Take out the fish from the marinade and set the marinade aside. Grill the fish covered, positioned 4 to 6 inches from medium heat, for 10 to 15 minutes, flipping once and basting with the marinade, until the fish flakes easily with a fork. Dispose of any extra marinade.
  • Season fish with a vibrant mix of fresh parsley and zesty lemon peel.
