Elevate Fish Friday with buttery garlic fillets and fresh spring greens in just 20 minutes!
Ingredients:
  • 2 lemons
  • 36.40 gm extra virgin olive oil
  • 4 (about 600g) skinless salmon fillets
  • 80g butter, chopped
  • 3 garlic cloves, crushed
  • 40.00 ml chopped fresh continental parsley leaves, plus extra leaves, to serve
  • 1 bunch asparagus, trimmed
Instructions:
  • Juice one fresh lemon. Slice the rest of the lemon thickly. In a frying pan over medium-high heat, heat oil. Cook lemon slices for 2 minutes on each side or until beautifully caramelized. Transfer to a plate.
  • Place the salmon, skin-side down, in the pan and sear for 2 minutes until beautifully golden. Flip the salmon and carefully push it to one side of the pan.
  • Combine butter, garlic, and parsley in the pan and sauté until fragrant, about 1 minute. Introduce lemon juice, lemon slices, and asparagus, bringing it to a boil. Simmer for 3-5 minutes until the fish is flaky. Serve by ladling the butter mixture over the fish and garnish with extra parsley.
