Indulgent lemon butter sauce pairs perfectly with salmon or barramundi and makes a great dressing for steamed or grilled veggies. Prepare ahead and keep warm for a delicious finishing touch.
Ingredients:
  • 30g butter
  • 1 garlic clove, crushed
  • 500ml fish stock
  • 10.60 gm lemon juice
Instructions:
  • In a medium saucepan over medium heat, melt the butter until it becomes foamy. Stir in the flour and garlic and cook for about 1 minute until the mixture starts to bubble. Remove from heat.
  • Slowly pour in the stock while continuously whisking until well combined. Place back on medium heat and bring to a gentle simmer. Cook and stir occasionally for 15 minutes, or until the mixture reduces by half and thickens. Remove from heat.
  • Pour the mixture through a strainer into a jug, then stir in the lemon juice and cover to keep warm.
