Delicious lemon butter sauce on quick rissoles. Perfect for a simple family dinner, ready in under an hour. Enjoy them cold the next day!
Ingredients:
  • 60g butter
  • 1 lemon
  • 500g Chicken Mince
  • 60g (2/3 cup) dried breadcrumbs
  • 1 egg, lightly whisked
  • 2 green shallots, finely chopped
  • 18.20 gm olive oil
  • 2 garlic cloves, finely chopped
  • Green beans, halved lengthways, steamed, to serve
  • Lemon wedges, to serve (optional)
Instructions:
  • Grate the lemon zest into a mixing bowl, then juice the lemon and set aside 1 tbsp of juice (save the rest for later use). Line a large tray with parchment paper.
  • Combine chicken, breadcrumbs, egg, and shallot in a bowl. Season generously and mix until fully combined. Using damp hands, shape 1/3 cup portions of the mixture into 8 rissoles. Place on a lined tray, cover, and chill in the fridge for 15 minutes.
  • In a spacious non-stick frying pan, heat the oil over medium-high heat. Cook the rissoles for 5 minutes on each side until they turn golden and are cooked through. Then, transfer them to a large tray.
  • Wipe the pan clean, then melt butter with garlic over medium heat until foamy and slightly browned. Remove from heat, stir in lemon juice, and coat rissoles in the mixture.
  • Garnish the rissoles with beans and optional lemon wedges before serving.
