Weekend brunch featuring Turkish bread and eggs for a leisurely morning meal.
Ingredients:
  • 1 loaf Turkish bread, halved horizontally
  • 70ml extra virgin olive oil
  • 1 large red onion, halved, thinly sliced
  • 2 lemons, juiced
  • 150g butter, chopped
  • 6 eggs
  • 350g (1 1/4 cups) Greek Style Yoghurt
  • 1 clove garlic, crushed
  • 2.50 gm ground cumin
  • 1/2 tsp dried chilli flakes
  • 1/2 bunch mint, leaves picked, small leaves reserved, large leaves roughly chopped
Instructions:
  • Preheat the oven to 200C. Arrange bread halves, cut-side up, on an oven tray. Drizzle with 2 tablespoons of oil, sprinkle with salt and pepper. Bake for 10 minutes until golden and toasted.
  • In a large non-stick frying pan, heat 1 1/2 tablespoons of oil over low-medium heat. Cook the onion with 1/2 teaspoon of salt for 8 minutes until soft. Stir in 2 teaspoons of lemon juice, then transfer to a bowl. Wipe the pan clean and set aside.
  • Prepare a large tray or work surface with a sheet of baking paper. Melt 15g of butter in the pan over low–medium heat. Crack in 2 eggs and cook for 2 minutes until the whites are cooked, but the yolks remain runny. Gently move the eggs to the prepared tray with a spatula. Repeat this process two more times with the remaining butter and eggs.
  • Lay out the toasted bread halves on a serving platter or chopping board. Spoon 3 dollops of yogurt evenly on each piece, then distribute the onions among the yogurt. Arrange the eggs next to each dollop of yogurt.
  • Place the frying pan back on medium heat and melt the remaining 105g butter. Stir in garlic and cumin, and cook for 1 minute until fragrant. Pour in the rest of the lemon juice, season with salt, and cook for another minute until sizzling.
  • Pour the flavorful butter mixture over the eggs, then sprinkle with spicy chili flakes and fresh mint. Cut each piece of bread into thirds and serve right away.
