Whip up a vibrant Arabian salad with bulgur, tomatoes, and Progresso™ chickpeas in just 35 minutes.
Ingredients:
  • 1 1/2 cups water
  • 1 cup uncooked bulgur
  • 1 can (15 oz) Progresso™ chickpeas (garbanzo beans), drained, rinsed
  • 1 1/2 cups grape tomatoes, cut in half
  • 1 cup diced cucumber
  • 8 medium green onions, thinly sliced (1/2 cup)
  • 1/3 cup crumbled feta cheese
  • 1/3 cup chopped fresh parsley
  • 2 tablespoons finely chopped fresh mint leaves
  • 1/2 teaspoon salt
  • 1/4 cup fresh lemon juice
  • 1 tablespoon olive oil
Instructions:
  • Heat water in a 2-quart saucepan over medium-high heat until boiling. Add bulgur, then reduce heat, cover, and simmer for 13 to 15 minutes or until water is absorbed. Transfer the cooked bulgur to a large bowl and allow it to cool completely.
  • Combine chickpeas, tomatoes, cucumber, onions, cheese, parsley, mint, and salt with bulgur, and gently toss. Whisk lemon juice and oil in a small bowl, then drizzle over the bulgur mixture and toss gently to coat.
