Elevate your fruit game with spiced fresh fruit and bulgur wheat from Prevention Healthy Cooking.
Ingredients:
  • 1 cup orange juice
  • 1/2 cup uncooked bulgur
  • 2 tablespoons lemon juice
  • 1 tablespoon extra-virgin olive oil
  • 3/4 teaspoon ground cumin
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 large tomato, chopped
  • 1/2 cantaloupe, peeled, seeded and cubed
  • 1 cup fresh strawberries, diced
  • 1/2 pint fresh blueberries
  • 1/2 pint fresh raspberries
  • 1/2 small red onion, chopped
  • 2 tablespoons chopped Italian flat-leaf parsley
  • 1 tablespoon chopped fresh mint
Instructions:
  • Mix refreshing orange juice with hearty bulgur in a medium bowl and allow it to sit for 30 minutes until the bulgur is softened and tender.
  • Combine lemon juice, oil, cumin, cinnamon, salt, and pepper in a small bowl and whisk until well mixed.
  • First, drain the bulgur and transfer it to a large bowl. Combine it with the tomato, cantaloupe, strawberries, blueberries, raspberries, onion, parsley, and mint. Drizzle the lemon juice mixture over the salad and toss gently to ensure it's evenly coated. Allow the salad to sit for at least 15 minutes to meld the flavors together.
