Baked lemon butter salmon in foil recipe

30-minute baked salmon for a fast and tasty weeknight meal.
Ingredients:
  • 40g butter, chopped
  • 1 garlic clove, crushed
  • 1 tsp finely grated lemon rind
  • 2 bunches asparagus, trimmed
  • 4 (about 180g each) skinless, boneless salmon fillets
  • 40.00 ml dill
  • 4 slices ciabatta
Instructions:
  • Preheat your oven to 200°C/180°C fan forced. Combine butter, garlic, and lemon rind on a small chopping board. Mash with a fork until well mixed.
  • Start by tearing four 30cm square sheets of foil and lining them with baking paper. Divide the asparagus equally among the papers, then arrange the salmon over the asparagus. Add small spoonfuls of the butter mixture on top, and season to taste.
  • Wrap the foil and paper neatly around the filling to create a tight seal. Transfer to a large baking tray and bake for 15-20 minutes (adjusting for salmon thickness) until the salmon easily flakes with a fork.
  • Unwrap the parcels and sprinkle with freshly chopped dill. Enjoy with a side of tangy lemon wedges and crunchy crusty bread.
