Baked Lemon-Butter Salmon with Pasta

Lemon butter baked salmon served with pasta for a simple weeknight dinner.
Ingredients:
  • salt and freshly ground black pepper to taste
  • 1 (8 ounce) salmon fillet
  • 1 medium lemon, halved, divided
  • 1 tablespoon garlic, minced
  • 2 tablespoons butter, cut into pieces, divided
  • 4 ounces dry fettuccine pasta
  • 0.5 tablespoon dried parsley
  • 0.25 teaspoon salt
  • 0.125 teaspoon ground black pepper
Instructions:
  • Preheat the oven to 390°F (200°C) for perfectly cooked results.
  • Season both sides of the salmon fillet with a gentle sprinkle of salt and pepper. Transfer it to a 2-quart baking dish, then generously squeeze half a lemon over the top. Sprinkle over minced garlic and half of the butter pieces.
  • Cook the salmon in the preheated oven until it’s easily flaked with a fork, approximately 15 minutes.
  • Fill a large pot with lightly salted water and bring it to a rolling boil. Cook the fettuccine until al dente, about 8 minutes.
  • Flake the cooked salmon into large pieces, as it will naturally separate more when mixed with the pasta.
  • Gently mix the cooked pasta and salmon together in a baking dish, then generously drizzle with olive oil and scatter the remaining butter over the top. Sprinkle the lemon zest over the dish and squeeze the lemon juice over it. Finish by adding parsley, salt, and pepper to taste.
  • Gently mix everything together until the pasta is fully coated in the pan juices and all ingredients are well combined. Ensure the salmon is evenly dispersed throughout the dish. Taste and season accordingly, adding more butter or oil if the pasta appears too dry.
