Thyme butter salmon parcels

Spicy salmon with zesty vegetables baked to perfection.
Ingredients:
  • 80g butter, softened
  • 20.00 ml lemon zest
  • 2 tsp thyme leaves
  • 2 zucchini, thinly sliced diagonally
  • 1 red onion, cut into wedges
  • 1 bunch asparagus, woody ends trimmed
  • 4 (about 150g each) salmon fillets, skin on
  • 2 long red chillies, halved lengthways (optional)
  • 1 lemon, cut into wedges
Instructions:
  • Preheat your oven to 200°C. Mix together butter, lemon zest, and fresh thyme leaves in a small bowl. Season with your favorite spices.
  • Prepare four large sheets of baking paper. Lay them out neatly on a clean work surface. Distribute the zucchini, onion, and asparagus evenly among the sheets. Place the salmon on top of the vegetables. Add optional chili and the butter mixture. Season everything to your liking.
  • Fold the 2 long sides of the paper to seal, then roll up the ends to enclose the salmon. Place on a baking tray and bake for 15-20 minutes until salmon is just cooked. Divide among plates and serve with lemon wedges.
