20-minute side dish: Frozen veggies upgraded with crispy bacon.
Ingredients:
  • 3 slices bacon, cut into 1/2-inch pieces
  • 2 cups frozen baby sweet peas (from 12-oz bag)
  • 2 cups frozen extra sweet corn (from 12-oz bag)
  • 2 tablespoons water
  • 1/4 to 1/2 teaspoon dried thyme leaves
  • 2 tablespoons butter or margarine
Instructions:
  • Cook the bacon in a 12-inch nonstick skillet over medium heat, stirring occasionally, until crispy. Use a slotted spoon to remove the bacon and place it on paper towels to drain. Keep 1 tablespoon of drippings in the skillet.
  • Combine peas, corn, and water with the flavorful bacon drippings in a skillet. Cover and cook over medium heat for 6 to 8 minutes, stirring occasionally, until the vegetables are tender and the liquid has evaporated.
  • Coat vegetables with thyme and butter, then transfer to a serving bowl and sprinkle with bacon.
