Homemade lemon cordial: a cool summer thirst-quencher.
Ingredients:
  • 20.00 ml grated lemon rind
  • 2 tsp grated lime rind
  • 196.88 gm lemon juice
  • 196.88 gm lime juice
  • 1 tsp citric acid (see note)
  • 2.50 gm tartaric acid
  • 322.50 gm caster sugar
  • 750.00 gm boiling water
Instructions:
  • Combine lemon rind, lime rind, lemon juice, lime juice, citric acid, tartaric acid, and sugar in a heatproof bowl. Pour in boiling water and stir until sugar dissolves. Strain the mixture into a heatproof jug, then carefully pour into hot sterilized bottles and seal them. Chill in the refrigerator until cold.
  • To serve, combine 1/3 cup cordial with 2/3 cup chilled sparkling mineral water or iced water. Garnish with thinly sliced lemon and lime before serving.
