Ingredients:
  • 225.00 gm white sugar
  • 250.00 gm water
  • 86.63 gm lemon juice
  • 82.50 ml gin or vodka
  • 8 fresh mint leaves
  • 1 lemon, rind finely grated
  • 250.00 ml ice cubes
Instructions:
  • In a small saucepan, gently melt the sugar in water over low heat until dissolved and the mixture boils. Simmer on low for 5 minutes. Allow to cool, then transfer to an airtight container and refrigerate.
  • In a blender, combine 1/3 cup chilled syrup, lemon juice, gin, mint, lemon rind, and ice cubes. Blend until ice is crushed. Divide the mixture into 2 chilled glasses and serve.
