Lime and lemon grass cooler

Ingredients:
  • 4 stalks of lemon grass, sliced
  • 875.00 gm water
  • 112.50 gm white sugar
  • 500.00 gm chilled water
  • 2 limes, cut into wedges
Instructions:
  • In a blender, combine half of the lemongrass with 1 1/2 cups of water. Blend until smooth, strain the mixture, and transfer it to a large jug. Repeat the process with the remaining lemongrass and another 1 1/2 cups of water.
  • In a small saucepan, combine sugar with 1/2 cup of water. Stir over low heat until it comes to a boil. Reduce heat and simmer for 5 minutes. Then, set it aside.
  • In a jug, mix together lemon grass liquid, sugar syrup, and chilled water until well combined. Stir in fresh mint and lime, then serve.
