Easy, delicious homemade puddings.
Ingredients:
  • 50g unsalted butter, softened
  • 80g caster sugar
  • 2 lemons, rind finely grated and juiced
  • 1 lime, rind finely grated, juiced
  • 250ml milk
  • 2 eggs, separated
  • 40.00 ml plain flour
  • Icing sugar, to dust
Instructions:
  • 1. Preheat your oven to 180°C and generously grease four 1-cup (250ml) ramekins or ovenproof dishes.
  • Beat together the butter and sugar with an electric beater until pale and creamy. Mix in the lemon and lime rind and juice, milk, egg yolks, and flour until the mixture looks slightly curdled.
  • Beat the egg whites with clean beaters until stiff peaks form. Gently fold into the lemon mixture until fully combined. Spoon into dishes and place in a large roasting pan. Fill the pan with enough boiling water to reach halfway up the sides of the dishes. Bake for 25 minutes until puffed and firm. Sprinkle with icing sugar and serve right away.
