Lemon and pesto spaghetti

Elevate simple pasta with a zesty twist that's sure to please.
Ingredients:
  • 20.00 ml white vinegar
  • 2.40 gm salt
  • 1 bay leaf
  • 3 lemons, peeled rind
  • 400g Vermicelli pasta
  • 60g pesto
  • Shaved parmesan, to serve (See note)
Instructions:
  • In a small saucepan, combine vinegar, salt, bay leaf, lemon rind, and 1/4 cup (60ml) water. Simmer gently over low heat for 15 minutes. Let it cool, then drain and thinly slice the lemon rind.
  • Cook the pasta in a pot of boiling water following package instructions until al dente. Drain and return to the pot.
  • Mix the pesto and lemon zest with the pasta until evenly coated. Top with freshly grated Parmesan cheese and a sprinkle of freshly ground black pepper before serving.
