Grilled Mediterranean fusion feast with vibrant Greek flavors.
Ingredients:
  • 4 lamb chump chops, trimmed
  • 1 lemon, zested, juiced
  • 56.88 gm olive oil
  • 23.40 gm Dijon mustard
  • 20.00 ml thyme, chopped
  • 2 zucchini, sliced lengthways
  • Salad leaves, to serve
  • Lemon wedges, to serve
Instructions:
  • Arrange the lamb in a single layer in a shallow dish.
  • Combine freshly squeezed lemon juice, aromatic oil, Dijon mustard, fresh thyme, and season generously. Drizzle this flavorful mixture over the succulent lamb, ensuring it's evenly coated. Let it marinate for a minimum of 30 minutes, turning the lamb occasionally for optimal flavor infusion.
  • Preheat a barbecue plate or char-grill on high, then reduce heat to medium. Cook the lamb for 4-5 minutes on each side until cooked to your liking. Rest, covered, for 5 minutes before serving.
  • Char-grill the zucchini for 1-2 minutes on each side until tender. Serve the lamb with the zucchini, salad, and a lemon wedge on the side.
