Lemon Basil Chicken and Vegetables

A quick and delicious stir-fry using chicken breasts, frozen veggies, and stir-fry sauce. Dinner ready in 30 minutes!
Ingredients:
  • 1 cup uncooked brown rice
  • 1 pound boneless skinless chicken breasts
  • 1/4 teaspoon coarsely ground pepper
  • 1/4 teaspoon garlic powder
  • 1 medium onion, cut into thin wedges
  • 1 bag (1 pound) frozen baby bean and carrot blend
  • 3/4 cup water
  • 1/2 cup lemon-basil stir-fry sauce
  • 1 teaspoon cornstarch
Instructions:
  • Prepare the rice following the package instructions.
  • Cut the chicken into thin strips. Spray a large nonstick skillet with cooking spray and heat over medium-high heat. Add the chicken strips and season with pepper and garlic powder. Cook for 4 to 6 minutes until the chicken is browned. Then add the onion and cook for an additional 2 minutes, stirring occasionally.
  • Add the frozen vegetables to the pot along with water. Bring it to a boil, then lower the heat to medium. Cover the pot and let it cook for 5 to 7 minutes, occasionally stirring, until the vegetables are tender.
  • Whisk stir-fry sauce with cornstarch until smooth. Stir sauce into mixture in skillet and bring to a boil, stirring constantly. Let it boil and stir for 1 minute. Serve over rice in bowls. Enjoy the chicken mixture on top.
