Baked lemon-basil chicken served with savory baked potatoes.
Ingredients:
  • 2 (5 ounce) chicken breasts
  • 2 tablespoons olive oil, or more as needed
  • salt and freshly ground black pepper to taste
  • 0.125 teaspoon garlic powder, or to taste
  • 1 medium lemon, halved
  • 1 bunch fresh basil, chopped
Instructions:
  • Preheat the oven to a toasty 425 degrees F (220 degrees C) and prepare a baking sheet with a shiny layer of aluminum foil.
  • Begin by thoroughly rinsing the chicken breasts and gently drying them with paper towels. Remove and dispose of any excess fat. Tenderize the chicken using a meat mallet. Massage each breast with 1 tablespoon of olive oil, ensuring all sides are lightly coated. Sprinkle with salt, pepper, and garlic powder, then place on the baking sheet.
  • Drizzle the juice from half a lemon over the chicken breasts, then generously sprinkle with basil. Place a slice of lemon on each breast. Save the rest of the lemon for later.
  • Roast the chicken breast in the preheated oven until it's no longer pink in the center and the juices run clear, approximately 20 minutes. Use an instant-read thermometer to ensure it reaches 165 degrees F (74 degrees C). Cover with foil and let it rest for 7 minutes before serving.
