Lemon-sour cream coated chicken breasts, breaded with herb stuffing, baked for a quick, easy, and delicious meal.
Ingredients:
  • 6 ounces sour cream
  • 2 teaspoons lemon juice
  • 2 teaspoons paprika
  • 1 (14 ounce) package dry stuffing mix (such as Pepperidge Farm® Herb Seasoned Stuffing)
  • 8 thin chicken breasts
  • 0.5 cup butter
Instructions:
  • Heat up your oven to 350°F (175°C).
  • In a bowl, mix sour cream, lemon juice, and paprika until well combined. In a shallow bowl, place stuffing mix. Dip chicken breasts in sour cream mixture to coat both sides, then in the seasoned stuffing mix on both sides. Roll up each chicken breast and transfer to a glass baking pan.
  • In a saucepan over gentle heat, melt the butter until smooth, then generously drizzle it over the chicken breasts in the baking pan.
  • Roast the chicken breasts in the oven until they are fully cooked, browned on the outside, and the juices run clear, for about 45 to 60 minutes or until a meat thermometer reads at least 165°F (74°C) when inserted into the center.
