Easy Breaded Fish Fillets

"Quick and delightful seafood dinner with flaky fish fillets in 25 minutes."
Ingredients:
  • Nonstick cooking spray
  • 1/2 cup crushed seasoned croutons
  • 1/4 cup grated Parmesan cheese
  • 2 teaspoons dried parsley flakes
  • 1/4 teaspoon paprika
  • 1 egg
  • 1 tablespoon lemon juice
  • 1 tablespoon water
  • 1 lb. fish fillets (1/4 to 1/2 inch thick)
Instructions:
  • Preheat the oven to 350°F. Generously grease a shallow baking pan. In a shallow dish or pie pan, mix together croutons, cheese, parsley flakes, and paprika until well combined. In another shallow dish, whisk together the egg, lemon juice, and water until smooth.
  • Cut fish fillets into serving-sized pieces. Coat the fish in the egg mixture, ensuring the pieces are of uniform thickness. Next, cover the fish in the crouton mixture, gently pressing to coat evenly. Place the coated fish in a sprayed pan and lightly spray with cooking oil for approximately 5 seconds.
  • Bake at 350°F until fish easily flakes with a fork, 10-15 minutes.
