Vibrant marinade enhances grilled chicken.
Ingredients:
  • 6 (4 ounce) boneless, skinless chicken breasts, trimmed of excess fat
  • 1 teaspoon freshly grated lemon peel
  • 0.25 cup fresh lemon juice
  • 2 teaspoons minced fresh garlic
  • 0.25 teaspoon salt
  • 2 tablespoons Mazola® Corn Oil
  • 0.5 cup loosely packed fresh basil leaves
Instructions:
  • Evenly flatten the chicken to 3/4-inch thickness, then dry it with paper towels and place it in a large resealable plastic bag.
  • In a blender or food processor, blend lemon peel, lemon juice, garlic, salt, oil, and basil until well combined, about 30 seconds.
  • Coat the chicken thoroughly with the marinade in a sealed bag. Refrigerate for at least 15 minutes or overnight.
  • Heat the grill to a toasty medium-high temperature of around 400 degrees Fahrenheit.
  • Discard the marinade and take out the chicken.
  • Grill until perfectly cooked, about 4 to 6 minutes per side.
  • Plate the dish and add a sprinkle of fresh basil on top, for an extra touch of flavor.
