Ingredients:
  • 1 tablespoon butter
  • 0.66670000553131 cup white sugar
  • 3 tablespoons lemon juice
  • 2 tablespoons all-purpose flour
  • 1 tablespoon grated lemon zest
  • 2 egg yolks
  • 2 egg whites
  • 1 (9 inch) unbaked pie crust
  • 1.75 cups fresh blueberries
Instructions:
  • Heat your oven to 350°F (175°C).
  • In a large bowl, blend together creamy butter with sugar, lemon juice, flour, and lemon zest. Incorporate egg yolks followed by milk.
  • Whisk egg whites in a spacious glass or metal bowl until they form stiff peaks. Carefully fold them into the lemon mixture. Pour the filling into the pie crust and evenly distribute the blueberries on top.
  • Bake in the preheated oven for about 50 minutes or until the filling is set. Cover the pie with foil after 30 minutes to prevent browning. Let it cool slightly before serving.
