Delicious lemon blueberry parfait with layers of tangy lemon curd, sweet blueberry sauce, and fluffy whipped cream in a stunning presentation.
Ingredients:
  • 1.5 cups fresh blueberries
  • 1.5 tablespoons blueberry preserves
  • 1.5 cups heavy cream, chilled
  • 2 tablespoons confectioners' sugar
  • 1 cup lemon curd
  • 12 fresh blueberries
  • 4 mint leaves
Instructions:
  • In a small saucepan, mix blueberries and blueberry preserves over medium heat. Boil, then reduce to a simmer until blueberries soften and pop, about 5 minutes. Let cool for 15 to 20 minutes to slightly thicken the sauce.
  • In a large chilled glass or metal bowl, use an electric mixer to beat cream until frothy. Gradually add vanilla extract and sugar while beating on low speed until soft peaks form. Increase speed to high as the cream firms up. Beat until stiff peaks form, for about 1 to 2 minutes, scraping down the sides of the bowl once during mixing.
  • Layer the lemon curd, blueberry sauce, and whipped cream equally in dessert glasses. Repeat layers once more. Top with fresh blueberries and a mint sprig for garnish.
  • Transfer the glasses to the fridge and refrigerate for at least 30 minutes.
