Upgrade classic bread pudding with zesty lemon pie filling.
Ingredients:
  • 1/2 cup sugar
  • 1/2 teaspoon vanilla
  • 6 eggs
  • 1/2 cup Original Bisquick™ mix
  • 2 cups milk
  • 10 cups cubed French bread (about ten 1-inch slices)
  • 1 can (15.75 oz) lemon pie filling or any fruit pie filling
  • 1 cup Cool Whip frozen whipped topping, thawed
Instructions:
  • Preheat oven to 350°F. Grease a 3-quart casserole dish generously with shortening or cooking spray. In a large bowl, whisk together sugar, vanilla, and eggs until well combined. Add Bisquick mix and milk, then fold in bread cubes until evenly coated.
  • Layer half of the bread mixture into the casserole dish. Pour 1 cup of pie filling over the bread mixture in a random pattern. Finish by topping with the remaining bread mixture.
  • Bake for 45 to 50 minutes until golden brown and a knife inserted in the center comes out clean. In a small bowl, combine the leftover pie filling with whipped topping. Serve the warm pudding with the whipped topping mixture. Store covered in the refrigerator.
