Indulge in a stack of fluffy pancakes smothered in delicious jam for breakfast perfection.
Ingredients:
  • 190g (1 1/4 cups) self-raising flour
  • 20.00 gm caster sugar
  • 0.63 gm bicarbonate of soda
  • 375ml (1 1/2 cups) buttermilk
  • 1 egg, lightly whisked
  • 20g butter, melted
  • 1 lemon, zested
  • Fruit and Chia Spread (Mango, Passionfruit & Chia seeds), warmed, to serve
  • Icing sugar optional, to serve
Instructions:
  • In a medium bowl, whisk together the flour, sugar, and bicarbonate of soda. Create a well in the center and add the buttermilk and egg. Whisk until combined, then stir in the butter and zest.
  • Preheat a non-stick frying pan over medium-high heat and lightly coat with oil. Pour quarter cup portions of the batter onto the pan. Cook until bubbles form on the surface, then flip and cook for another 1-2 minutes until golden brown.
  • Serve the pancakes stacked with a warm jam drizzle and dusted with icing sugar.
