Lemon cashew rice

Zesty lemon cashew rice - a perfect side dish.
Ingredients:
  • 36.80 gm vegetable oil
  • 1 brown onion, halved, thinly sliced
  • 1 garlic clove, coarsely chopped
  • 1 tsp ground turmeric
  • 2.50 gm ground cumin
  • 2 tsp mustard seeds
  • 12 fresh curry leaves
  • 1/2 tsp chilli powder
  • 400g (2 cups) Basmati rice
  • 500ml (2 cups) vegetable or chicken style liquid stock
  • 80g (1/2 cup) raw cashews
  • 60ml (1/4 cup) fresh lemon juice
Instructions:
  • In a large heavy-based saucepan over medium heat, sauté the onion in the oil for about 5 minutes until it turns golden, while continuously stirring.
  • Toss in the garlic, turmeric, cumin, mustard seeds, curry leaves, and chili powder, and stir for 30 seconds until fragrant. Follow by adding the rice and stir to coat evenly for another 30 seconds.
  • Add the stock to high heat and bring to a boil. Cover, then lower the heat to medium and simmer for 8-10 minutes. Let it sit covered for 5 minutes before serving.
  • Toast cashews in a frying pan over medium heat until golden, stirring occasionally. Coarsely chop once cooled.
  • Pour the rice mixture into a beautiful serving bowl. Drizzle with fresh lemon juice, then sprinkle with toasted cashews for a delightful presentation.
