Luscious lemon cheese cake with tangy homemade curd, layers of yellow cake mix and vanilla pudding for an effortless treat.
Ingredients:
  • 1 (18.25 ounce) package yellow cake mix
  • 1 cup milk
  • 1 (3.5 ounce) package instant vanilla pudding mix
  • 3 eggs
  • 0.33333298563957 cup vegetable oil
  • 1.5 cups white sugar
  • 1 cup butter
  • 1 cup fresh lemon juice
  • 6 egg yolks
  • 0.25 cup all-purpose flour
  • 4 tablespoons grated lemon zest
Instructions:
  • Preheat the oven to 350°F (175°C) and prepare three 9-inch round cake pans by greasing and flouring them.
  • Combine the cake mix, milk, instant vanilla pudding, 3 eggs, and oil in a large bowl until well blended. Transfer the batter into the prepared pans.
  • Bake in the preheated oven for about 25 minutes, or until a toothpick inserted into the center of the cakes comes out clean. Let the cakes cool completely on wire racks.
  • In the top of a double boiler, mix sugar, butter, lemon juice, 6 egg yolks, flour, and lemon zest. Stir over medium heat until thickened. Take off the heat and let the lemon curd cool completely before using.
  • Gently glide a knife along the edges of the cake pans. Flip over the cakes; fill with chilled lemon curd between the layers.
