Wholesome low-fat cheesecake topped with a zesty lemon sorbet.
Ingredients:
  • 1.75 cups graham cracker crumbs
  • 0.5 cup butter
  • 0.5 teaspoon ground cinnamon
  • 1 (.6 ounce) package sugar free lemon flavored Jell-O®
  • 1 cup boiling water
  • 1 (8 ounce) package reduced fat cream cheese
  • 2 teaspoons vanilla extract
  • 1 cup frozen light whipped topping, thawed
Instructions:
  • Preheat your oven to 350 degrees F (175 degrees C). Mix graham cracker crumbs, butter, and cinnamon in a bowl. Press the mixture into the bottom of a 9-inch square pan. Bake for 8 to 10 minutes until golden. Let it cool before serving.
  • Combine lemon gelatin with boiling water until fully dissolved. Allow the mixture to cool until slightly thickened, but still pourable. In a spacious bowl, whisk together cream cheese and vanilla until velvety. Gently incorporate the lemon gelatin mixture. Finally, carefully fold in the whipped topping.
  • Smooth the luscious filling into the golden crust, then generously dust the top with a flurry of graham cracker crumbs. Let it chill in the refrigerator overnight for the flavors to meld into perfection.
