Lemony cheesecake cookies - festive and delightful for gifting or sharing.
Ingredients:
  • 0.5 cup unsalted butter, softened
  • 3 ounces cream cheese, softened
  • 0.5 cup white sugar
  • 1 large egg yolk
  • 1 tablespoon freshly grated lemon zest
  • 1 teaspoon lemon extract
  • 1.75 cups all-purpose flour
  • 5 drops yellow food coloring
  • 60 cinnamon red hot candies, or as needed
Instructions:
  • Preheat the oven to 350°F (175°C) and prepare a baking sheet lined with parchment paper.
  • In a bowl, cream together butter and cream cheese until smooth. Gradually add sugar and beat until mixture is light and fluffy. Stir in egg yolk, lemon peel, and lemon extract until well combined.
  • Combine the flour and salt in a bowl. Gradually add the mixture to the butter in 3 parts, stirring well after each addition. Mix in the food coloring until completely incorporated.
  • Place the cookie dough on the baking sheet using a cookie press with a flower disc, ensuring they are spaced 1 inch apart. Gently press one red hot cinnamon candy into the center of each cookie.
  • Bake in the preheated oven for 14 to 16 minutes until the edges are just turning golden brown; be careful not to overbake.
  • Place the cookies onto a wire rack to cool completely.
