Indulge in a creamy, low-fat lemon cheesecake with a crunchy graham cracker crust.
Ingredients:
  • 1 (9 inch) reduced fat graham cracker pie crust
  • 2 (8 ounce) packages cream cheese
  • 1.5 tablespoons all-purpose flour
  • 0.5 cup egg substitute
  • 2.5 tablespoons lemon juice
  • 1 (8 ounce) container nonfat lemon yogurt
Instructions:
  • Preheat the oven to 350 degrees F (175 degrees C) and place the pie crust on a baking sheet.
  • In a large bowl, smoothly mix together cream cheese and sugar using an electric mixer. Gradually add flour, followed by egg substitute and lemon juice. Gently fold in lemon yogurt until well combined. Pour the mixture into the crust.
  • Bake in the preheated oven for 50 to 60 minutes until the filling is set. Let the pie cool, then refrigerate for at least 4 hours before serving.
